Story

A medium roast decaf blend of caturra, castillo and colombia variety coffees grown by small producers in San Agustin, Huila, Colombia. It is fully-washed and later decaffeinated using the EA process.

The process of decaffeinating this coffee begins with locally harvested sugar cane, which is turned into molasses and allowed to ferment, ultimately yielding the organic compound ethyl acetate (EA). This compound bonds with the caffeine molecule, effectively removing it from the coffee entirely while also imparting a slight note of fruitiness. Ethyl acetate is naturally occurring in many fruits and is also used extensively in culinary production, commonly adding a note of sweetness to hard candy, chewing gum, and ice cream.

The flavor profile has sugary notes of molasses, caramel, bright citrus and a graham-cookie like sweetness. You'll be surprised this is a decaffeinated coffee!

Freshly roasted in Miami, Florida.

FAQS

1. What does San Agustin EA Decaf taste like?

San Agustin EA Decaf is sweet, chocolatey, and beautifully balanced, with notes of caramel, chocolate, panela, and a touch of bright citrus. Roasted medium, it has a rich molasses-like sweetness and a comforting graham-cookie character that makes every cup feel familiar and satisfying. It’s so full of flavor, you might have a hard time believing it’s decaf.

2. What makes this decaf so special?

It starts with great coffee before it ever becomes decaf. San Agustin is made with Caturra, Castillo, and Colombia varieties grown by small producers high in the mountains of Huila, where elevation and careful farming help develop sweetness and complexity.

Then comes the EA sugarcane decaffeination process, which removes most of the caffeine while helping preserve the coffee’s character. The result is a decaf that still tastes like the coffee we wanted to share in the first place—sweet, balanced, expressive, and genuinely delicious.

3. What is the EA sugarcane decaf process?

The process begins with locally harvested sugarcane, which is transformed into molasses and fermented to produce ethyl acetate, or EA. EA is an organic compound that also occurs naturally in fruits. During decaffeination, it bonds with caffeine, allowing the caffeine to be removed from the green coffee.

What we love about this process is how well it helps preserve the coffee’s sweetness and character while also contributing a subtle fruitiness. You get a beautifully flavorful cup with most of the caffeine removed—not a coffee that tastes like something is missing.

4. Where does San Agustin EA Decaf come from?

This coffee comes from San Agustin, Huila, Colombia, where small producers grow Caturra, Castillo, and Colombia varieties at 1,600–2,000 meters above sea level.

The coffee is fully washed before undergoing the EA decaffeination process, helping preserve the clean, balanced character of the original coffee. In the cup, that means caramel and chocolate sweetness, panela-like depth, and just enough citrus to keep everything lively.

5. What’s the best way to brew San Agustin EA Decaf?

With its caramel sweetness, chocolatey body, and balanced brightness, San Agustin is an incredibly approachable decaf. We recommend brewing it as pour over, drip, AeroPress, or french press.

For a cleaner cup that highlights its caramel, panela, and bright citrus, we especially love it as a pour over. For something rounder and richer, try a French press and let those chocolate and molasses notes take center stage. Morning, afternoon, or after dinner—this is the kind of decaf that reminds you the best part of coffee was never just the caffeine.
