Along the Sierra de los Cuchumatanes, the highest mountain range in Central America, the Coordinadora de Organizaciones de Desarrollo de Concepcion Huista (better known as “CODECH”) produces some of the best Fair Trade & organic coffees, not just in the department of Huehuetenango, but in all of Guatemala.
The Asociación de Desarrollo Integral Productivo Yamanonh (ADIPY) is one of four cooperatives that come together to form CODECH and covers 9 communities who belong to the Popti ethnic group.
ADIPY’s objective is to increase the incomes of its members through the production and commercialization of conventional & organic coffee, forest management, and the production of vegetables through irrigation that encourages the adequate use of natural resources.
The varieties grown in these regions are what we love to find: Bourbon, Caturra, Pache, Catuai. Coffee is grown at 1,700 - 1,900 meters above sea level. The cup exhibits lots of sweetness, notes of chocolate and berries and a pronounced, yet balanced acidity—this coffee is representative of the best coffees from Huehuetenango.
